Natasha Varetskaya has a 4 unit apartment "hotel" right on the main central walking street that is absolutely fabulous. For reference, I've stayed in apartments and hotels all over the FSU, so I"m not just writing this as somebody who had his low expectations minimally exceeded. Each of the apartments was big, completely modern, ultra clean, very well furnished and decorated with lots of innovated touches, and in a true Odessa luxury for those in the know... equipped with a quite effective air conditioner.
